Rhubarb Jam

Rhubarb Jam has that bright, tart flavor that wakes up a piece of toast in a hurry. There’s enough sweetness to round it out, but the rhubarb still gets to taste like rhubarb, which is kind of the point.

We like it on warm biscuits, toast with plenty of butter, and pancakes when you want something a little different from the usual berry jar. It’s also pretty good tucked into a thumbprint cookie or spooned onto something warm from the oven before anybody asks if dessert is ready yet.
